I’m Rebecca and I’ve thought about creating a food blog for a really long time. Literally years. However, I’ve always had a certain level of anxiety about sharing my recipes with other people. I often don’t measure things when I cook, and I also worry that people won’t like the same things I do. Well, the obvious fix for the former is to start measuring ingredients and keep track of what I actually do in my recipes so that I can share them. And it should also be obvious that not everyone likes the same things so maybe I shouldn’t worry so much!
Often, when looking at recipes online, I see many people commenting and asking what they can substitute for x ingredient, and can it be made vegetarian or gluten-free, etc. I’ve decided that I will include adaptations in my recipes where appropriate. These days, there are so many different diets people follow for various reasons, and I don’t want anyone to feel left out. Most recipes can easily be changed to suit your diet, but I understand that not everyone cooks as much as I do or has the time to research substitutions. So I plan on doing that for you.
This whole plan has been complicated recently as I was having some stomach problems and yesterday I was diagnosed with some form of gastroesophageal reflux disease (GERD). In my case, I do not know yet if it will clear up. Perhaps I’ll be able to eat normally again after treatment. But there is also a chance that this will be with me forever. And in my mind, even if it does clear up, the fact that it happened at all means it can happen again. I’ll post about this in more detail later.
As it happens, I was already planning on eating healthier this year and increasing the variety of vegetables I eat. There are many I don’t really like, but I haven’t tried them in a while so I’m going to have another go, experimenting with different preparations. I made myself like Brussels sprouts after eating them with a lot of butter and bacon and now I can actually tolerate them roasted with just olive oil and salt.
So I’ve decided that I need to make a few dietary changes, and I will share my findings with others. I’m hesitantly planning an elimination diet for when I come off my medication, so I will post about that in detail if it happens. The hesitation is mostly due to the fact that it will mean cooking two different meals every night since my husband is the world’s pickiest eater. I’m also not looking forward to a super restrictive diet, even temporarily, but I think it would be worth it to feel good. But more on that some other time.

Here are the kinds of posts I am planning for this blog:
- Recipes, including, where possible, alterations to make them vegan, vegetarian, low carb, low fat, gluten free and GERD friendly.
- My cooking and baking experiments, including fails. There are some areas of cooking and baking where I am very much a noob, but I want to get better and I will document my progress here.
- Ways to enjoy different vegetables, particularly if you don’t like the vegetable in question.
- If my GERD problem persists you can also expect a lot of posts on my experiences. If I do a strict elimination diet I will post all about it as I found it difficult to find detailed information online for free.
Perhaps later I will also write about cookware, exercise, kitchen appliances, grocery shopping, restaurant meals etc. But these posts would likely be in the minority.
I really like eggs, including putting eggs on just about anything, so I will be sure to inform you if any of my recipes are better with an egg.
Aside from baking and cooking, I enjoy writing and attempting to draw. I post about these things on my other blog, The Twisting Ether. I also play computer games, mostly World of Warcraft at the moment.
I guess that’s about it for now. This site is pretty bare but I’ll work on it over the next few days. Perhaps one day I will even come up with a good name!
