Trying to Enjoy Sweet Potato, Asparagus and Zucchini – The Plan

Most weeks I will probably just pick one vegetable to try to enjoy eating, but this week I picked three. I was hesitant as to whether to include the zucchini in this post since I plan on hiding it, but I may not use it all in that manner so maybe I will try it properly. My aim when trying these vegetables is to enjoy eating them in a way I can actually taste them as opposed to hiding them in other food.

These are three vegetables that I’ve just never liked eating. I don’t hate them though, so I’m giving them another chance. I have plans as to how I will prepare them but if anyone has alternatives, then feel free to comment. Just keep in mind that I can’t use too much acid, fat or dairy at the moment (boring I know).

Sweet Potato

I was a little baffled when I went to buy a sweet potato for the first time ever and found that there were three kinds, but for each kind, it had ‘/yams’ after it on the sign. So ‘red sweet potatoes/yams’ for example. I looked it up when I got home, and yams are not the same thing so I’m not sure why the supermarket labels it like that. This is Albertsons by the way; it’s where we always shop, though I am thinking of giving Sprouts a go once I start my elimination diet as the produce is meant to be better quality and I’ll be buying a lot of it.

Anyway, I’m 99% sure that what I have is a white sweet potato. There were red, white and oriental sweet potatoes and, since it’s not something I eat, I had no idea what kind to get. I thought they were all orange. A quick Google search told me that the white ones are less sweet, so I picked one of those. This is because, in my previous experiences with sweet potatoes, I have always felt that they taste like pure sugar and I found that off-putting.

I plan on cutting my sweet potato and roasting it with some other vegetables for dinner tonight. I am also roasting a whole chicken for the first time, which I will most likely post about tomorrow.

Asparagus

Asparagus is one of those vegetables that I will eat if it’s in a dish with a bunch of other stuff, but not really like. I have a pretty sizable bunch so hopefully I don’t hate it! I’m going to try roasting it I think, with olive oil and salt. I may also put some in a risotto later in the week, though I’m worried risotto might taste pretty sad without onion.

Zucchini

I normally find zucchini to be mushy and weird. I’m going to grate it with some carrot, cook lightly and put in meatballs which I’m hoping even my picky husband will like. I’ve done this with just carrot before and it worked out great.

If I have zucchini left over, I will probably roast it. That seems the safest way for me to cook vegetables at the moment since I can use minimal fat.
