Sweet Potato
So, I think I really just don’t like sweet potato. I cut it up and roasted it in the oven and, like I have always thought, it is just far too sweet. So sweet that it’s sickly. It’s not even a good sweetness. I tried looking up methods to make it less sweet, and everyone was suggesting adding a lot of butter and hot spices which I’m trying to avoid right now. If anyone has a healthy suggestion for enjoying sweet potato where it doesn’t taste so sweet then I’d love to hear it. For the moment, I’m putting it on the back burner.
I should mention that I had leftover roasted sweet potato and potato, and I tried pan frying them in olive oil, which is something I often do with left over roasted potato. I shouldn’t really be frying anything, but I didn’t want to waste the sweet potato and I couldn’t stomach eating it as is. I burned some of the pieces, which in retrospect I probably should have anticipated, sweet potato being so sweet. But the result was more palatable. I also added a bit more salt which probably helped. This is not super helpful though because I won’t be frying anything when I do my elimination diet and I was so hoping sweet potato could be a part of that.
As is, I can probably only tolerate it if it’s mixed with a bunch of other stuff.
Asparagus
This was the winner of the three, though I still don’t love it. I cooked it in the oven with olive oil, salt and a little parmesan cheese. I did slightly overcook it the first time, but the second I think I nailed it. It tasted okay, but I probably won’t be eating it whole very often. I can see myself cutting it up and incorporating it into recipes with other food.
Zucchini
I grated half of my zucchini and put it in meatballs where I obviously could not taste it. Nor could be very picky husband, so that’s a win!
Then I still had half left which I was constantly overlooking in disdain every time I saw it sitting in the fridge. But I knew I had to try it properly. So last night I added a few slices to the other vegetables I was roasting for dinner.
The result was not bad but not great either. I guess I just find zucchini to be pretty bland, especially when I’m having to limit what I put on it.
Summary
Sweet potato is gross, and asparagus and zucchini are edible and I will probably keep experimenting with them. Though I may have to wait for the coronavirus-induced supermarket madness to die down. I had a hard time getting any fresh vegetables at all on the weekend so I pretty much just got what was available rather than what I wanted.
