Trying to Enjoy Mushrooms and Summer Squash – Results

This is a follow up to my earlier post.

Mushrooms

First I tried the mushrooms chopped up with quinoa and vegetables. It was alright but I feel like the mushroom taste kind of overpowered everything and was just too much. I think it needed something acidic, or maybe something creamy, which I can’t have at the moment.

I then tried them stir fried with noodles and other vegetables. This worked a lot better; the mushroom pieces were bigger but the taste didn’t seem as strong.

Summer Squash

Much like zucchini, summer squash doesn’t seem to have much flavor of its own. Maybe that’s true of all squash. I sauteed it the first time with other vegetables and then added to rice a few times.

Summary

I’m not really sold on mushrooms yet; I didn’t hate them but I’m not sure I liked them either. Next time I’m going to try and get the white ones since the baby bellas I had are apparently stronger tasting. I’ll try again in a few weeks when I will be able to cook them in more interesting ways.

The summer squash makes it onto my list of vegetables I’ll eat. I think I might just assume I can tolerate all squash at this point.
