Breakfast
I was inspired by the apple I was cooking for my turkey burgers last night and made apple pie oats. I cooked a diced apple in a little olive oil with cinnamon and a pinch of nutmeg before adding to my usual oats (oats, almond milk, cashew butter, cinnamon, vanilla). I think cooking the apple in butter would have been better, and just a little sugar would have been nice, but I’m not allowed those right now and I was pretty happy with the result.
Tomorrow I’m having the same thing; I’ll try and measure the ingredients so I can post the recipe.
This was about 400 calories.
Lunch
Leftover turkey burger, brown rice, spinach. About 400 calories.
Dinner
Leftover turkey burger, brown rice, Brussels sprouts, carrots. About 450 calories.
My meals are getting more and more boring as I run out of food! We’re going shopping on Saturday morning though.
Snack
Macadamias, about 200 calories.
Macros
According to the Fitbit app, my split today was 34% carbs, 50% fat and 16% protein and I ate around 1450 calories. Wow at that fat! It was mostly olive oil that I was cooking with, and maybe I didn’t actually eat it all, so it could really be a little lower. As always, I’m low on protein. But we have almost no chicken breast left by this stage. At least I can eat eggs next week.
