GERD Elimination Diet – Day 20

Breakfast

Oats, almond milk, cinnamon, vanilla, cashew butter and mango on the side. About 370 calories.

Lunch

I cooked the last chicken breast from our Costco trip a month ago. Since it was a smaller one I ate the whole thing, plus a small salad. I’ve been struggling with how to make salads without being able to use vinegar to dress them, but I was watching some cooking videos the other day and got the idea to mix some fresh herbs with olive oil.

The salad is lettuce, cucumber and celery, with a dressing made of cilantro, extra virgin olive oil and a little salt. It tasted pretty good, and I put some of the dressing on the chicken too.

This meal was about 300 calories.

Dinner

Baked mahi mahi with dill and fresh parsley, with brown rice, carrots and broccoli. This was about 350 calories.

Macros

According to the Fitbit app, my split today was 37% carbs, 32% fat and 31% protein. This is much closer to the kind of split I’d like to keep to every day.

I only ate about 1000 calories, but I also didn’t exercise a lot today. It’s still probably too low, but I’m not hungry or anything.

Final Thoughts

It seems my heartburn is very gradually fading, though it’s still an annoying presence. The weird feeling in my throat is now almost non-existent so that’s good.

I’m trying to use less olive oil to keep my fat intake down, especially since I’m adding eggs on Monday. It’s just hard when there are so few options for adding flavor!

I’ve been spending more time than usual watching cooking videos and browsing recipes online. I’m just so ready to make real food again but I know it’s best to wait lest this horrible diet be for nothing. The thought of eggs on Monday is keeping me going for the moment.
