GERD Elimination Diet – Day 26

Today I got to introduce a new food and I chose potatoes. I get to eat them today and tomorrow followed by two days without them, and if I have no adverse reactions then I get to keep them in my diet forever!

Breakfast

Scrambled eggs with herbs and roasted potatoes, about 320 calories.

Yeah, I like my scrambled eggs like that, with some of the whites and yolks barely mixed. Usually there’s also cream and butter and often cheese, but today it was just the eggs and herbs with a little olive oil.

I probably should have included some vegetables, but I’m getting sick of eating so many with every meal, and I’m getting kind of low already so I need to ration them. This shopping only every two weeks thing is hard. I should have bought more fruit too, as I don’t have much of that left either and it would have gone well with this.

Lunch

Baked chicken breast, rice and vegetables, about 300 calories.

Dinner

Baked salmon with potato and broccoli, about 540 calories.

Snack

Pistachios and a peach fruit cup, about 200 calories.

Macros

According to the Fitbit app, my split today was 35% carbs, 37% fat and 28% protein, which is pretty good. I ate about 1370 calories, which is also good considering these last few weeks.

Final Thoughts

I’m happy that I have eggs back and I’ve been feeling pretty good these last few days. I just want all the food. I spend far too much time every day bookmarking recipes to try when I can eat the ingredients. One day, hopefully.
