GERD Elimination Diet – Day 34

Breakfast

Two scrambled eggs with spinach and cheddar on a flour tortilla. About 420 calories.

Lunch

Tuna, celery, spinach and mozzarella on a flour tortilla. About 330 calories.

Dinner

Pan fried chicken thighs (minimal oil) with roasted potato, carrot and Brussels sprouts. About 500 calories.

Macros

According to the Fitbit app, my split today was 26% carbs, 38% fat and 36% protein and I ate about 1250 calories. This was a lower effort day as far as working out goes so the calorie count is okay, and I’m pretty happy with the split, though the fat was a little high.

Final Thoughts

Today and tomorrow, I am reintroducing cheese. I feel fine right now and I’m hoping I continue to feel that way over the next few days.

Today we went to Costco, and although I was able to stock up on produce, they had just run out of toilet paper. We got there about an hour after opening, which I guess was too late. I wanted to get there earlier but my husband was dawdling.

One thing I have to say is that I am really disappointed in how Costco is handling social distancing. At first they were great; only a certain amount of people were allowed in the store at once, they were disinfecting the shopping carts, and there were staff enforcing social distancing in the checkout line. Now, everyone is required to wear masks, but it seems there’s no limit on how many people can be in the store. Pretty much no one was social distancing; it was horrible, though at least it did seem there were less family groups shopping. There were a few staff members telling people to get what they want and move in some of the more crowded areas. But I feel Costco caused that problem themselves; yeah, there will be too many people in some areas if they let everyone in the store at once. I felt safe the last time we went to Costco; now I’m dreading our next trip.

Hopefully Albertsons still has their health safety precautions in place, and hopefully they have toilet paper tomorrow. I would hate to have to go to yet another store this weekend to find some. I’m honestly surprised that there are still problems with the toilet paper supply. I mean, surely most people have stocked up by now!
