Breakfast
Two scrambled eggs with baby spinach mix and cheddar on a flour tortilla, about 430 calories.
Lunch
Chicken thighs, carrot, cucumber and strawberries. About 350 calories.
This might seem like a weird combination but I just didn’t feel like cooking vegetables and I wasn’t super hungry so I didn’t include any carbs. I just put some random raw vegetables and the strawberries on the plate with the chicken.
Dinner
Baked salmon, broccoli and homemade sourdough bread with parmesan cheese. Almost 600 calories.
This meal was probably bigger than necessary. I could have just had one slice of bread but I had two. I didn’t feel disgusting after it or anything though.
Snack
Most of an apple, around 60 calories. My husband stole some slices.
Macros
According to the Fitbit app, my split today was 30% carbs, 38% fat and 32% protein and I ate about 1430 calories.
Final Thoughts
So ends my cheese eating days, at least until I get through the next two without having any adverse reactions. For now I feel fine.
We went to Albertsons today and of course they were out of toilet paper, though we were able to get the other important things we needed. We had to make a second trip to Ralphs. I could deal with all this stay at home business much easier if grocery shopping wasn’t so hard right now. And I mean, yes, I could get groceries delivered, but I’ve heard a lot of stories of Instacrat shoppers making unusual substitutions, and I’m not sure I trust someone else to pick out my fruit and vegetables. I actually enjoy the process of grocery shopping too, at least ordinarily. I just hope things get a little more normal soon.
