Lamb meatballs, carrot, homemade sourdough and zucchini fries, about 530 calories.
I used this recipe from Damn Delicious as a guide for the zucchini fries. I did not make the delicious sounding but very GERD triggery dipping sauce, but I am sure the fries would have been even better if I had.
I made the zucchini fries by cutting the zucchini into sticks and coating in flour, then egg, then in an Italian breadcrumbs/parmesan mix. Then they went in the oven at 400 degrees F for about 15 minutes. I was a little worried they would not be crisp enough, because the recipe said to use a cooling rack on the baking tray. I don’t have one that’s oven safe so I just used a baking tray with parchment paper. The fries were super crispy! The zucchini itself of course was soft, but overall I think it worked out well.
I fully expect the leftovers to lose their crispiness but I think I can remedy that by putting them back in the oven for a bit. My picky husband of course won’t eat zucchini, or else there may not have even been any leftovers.

An apple, about 80 calories.
Macros
According to the Fitbit app, my split today was 41% carbs, 36% fat and 23% protein and I ate about 1400 calories.
Final Thoughts
I’ve realized I have to scale down my workout routine for a bit. I’ve been finding it hard to do the strength portions, particularly arms, and I think I’m either not giving myself enough rest or just not eating enough. Both are quite possible. So I’m sticking to cardio and light yoga for a few days, and I’m going to restructure my workouts for the week so I have more rest. Maybe I can add more again if I can make myself eat better.
