GERD Elimination Diet – Day 45

Breakfast

Baby spinach mix on homemade sourdough topped with fried eggs. I sprinkled some dukkah on top in place of the hot sauce I usually like to add, and it was amazing! This was about 440 calories.

Lunch

Turkey meatballs, cucumber, sour cream and tahini on a flour tortilla, about 400 calories.

Dinner

Chicken schnitzel, pan fried, with dukkah mixed into the breadcrumbs. I thought it would taste good and it did. Even my husband liked it! I also had roasted potatoes, carrots and Brussels sprouts which I also put some dukkah on, mixed with extra virgin olive oil. This meal was nearly 600 calories.

Snack

An apple, about 80 calories.

Macros

According to the Fitbit app, my split today was 39% carbs, 34% fat and 27% protein and I ate about 1500 calories.

Final Thoughts

I ordered a few things online recently, among them dukkah and tahini, so now it’s time to experiment with them. I feel like I need lemon to get the most out of the tahini, but the dukkah seems like it could make just about anything better. It’s the most excited I’ve been able to be about food for a while.

Tomorrow I will begin reintroducing beef. I don’t anticipate any problems, but we’ll see how it goes.
