Now that I can eat the things savory baked goods are made from, I can start baking again! Sugar will be reintroduced in about a week so then I’ll be able to bake most things. Just no chocolate. Additionally, I was lucky enough to find flour at the grocery store today, and it was even my favorite brand (King Arthur Flour).
I made cheddar and chive biscuits today; the recipe can be found here. I should have halved the recipe, but I was so excited to be baking again that although I knew I would have to freeze some, I didn’t really think much more about it.
It turns out, the recipe was so big I could just tell it was not going to fit in my food processor. This was going to be my first time making biscuits in one, but instead I ended up making them by hand. I could have at that point made the decision to halve the recipe, but I had already grated the cheese and chopped the chives so I just went with it.
The biscuits turned out really good, despite the difficulties I had in mixing and rolling out such a big batch. Since my husband doesn’t like cheese, I now have a bunch of cheese and chive biscuits in the freezer! In my experience, biscuits do tend to freeze quite well as long as you don’t leave them in there too long.
Breakfast
A fried egg and cheese on a flour tortilla, about 300 calories. I made it a quick breakfast so we could go grocery shopping early.
Lunch
One of the biscuits mentioned above and some strawberries, about 250 calories.
I wasn’t super hungry for some reason, though I could have eaten another biscuit since that doesn’t require hunger. I managed to restrain myself because I wanted one for dinner.
Dinner
A biscuit, turkey meatballs and salad, about 460 calories.
Snack
An apple, about 80 calories.
Macros
According to the Fitbit app my split today was 39% carbs, 42% fat and 19% protein and I ate about 1100 calories. Too low really, even for a low exercise day, but I’m not hungry. I probably should have eaten something extra for breakfast.
