GERD Elimination Diet – Day 53

Breakfast

Scrambled eggs with baby spinach and herbs and a cheese and chive biscuit, about 450 calories.

Lunch

Ground beef, cheese, sour cream and lettuce on a flour tortilla, about 540 calories.

Dinner

I made a chicken casserole thing I often make but modified it to fit my diet. It turned out really well even without the garlic, onion and wine it usually has. It was basically just chicken thighs, carrot and celery. I need to measure everything out properly so I can put up the recipe some day.

I ate this with a cheese and chive biscuit and the meal was about 570 calories.

Snack

Pistachios and a small glass of milk, 200 calories. I just really felt like milk for some reason.

Macros

According to the Fitbit app, my split today was 20% carbs, 59% fat and 21% protein and I ate about 1750 calories.

Final Thoughts

I guess all that dairy adds up fast! There was butter and heavy cream in both my scrambled eggs and my chicken casserole, though not much of each. I will try to be more mindful of this in future.

The ground beef serving at lunch was also a little big; it was the last of some 80% lean beef I had portioned and froze. The beef from now on will be 88% lean, which is probably about as far as I’m willing to go for most meals. After all, the fat is where the flavor is! And as long as I can be careful with my portion sizes I think it should be fine.

I have done keto before and a high fat diet actually made me feel great. I just missed carbs too much. Perhaps now a high fat diet may make me feel sick, if I truly have GERD. But so far I have felt fine, despite a few days where the fat content was a little too high.

Tomorrow I get to reintroduce sugar! I am planning on making some ‘healthy’ muffins for breakfast, and some kind of honey soy chicken thing for dinner. Then if the sugar reintroduction goes well, I want to make some baked granola next week, something I haven’t done before. I’m excited that I can finally start to make some more interesting food.

Food Blog

I’ve been thinking a lot about the food blog I want, and I think it will be separate from this if I can’t find any GERD triggers after this diet. It makes sense to keep this blog for GERD friendly recipes, but otherwise I would rather just have a more general food blog. I have a few recipes almost ready to post; they just need some testing. What I really need is a name! I’ve always been horrible at naming things and my husband always has the most ridiculous suggestions. I might start an Instagram account before the blog itself, since I think it’s possible to change the username. But otherwise, I’m basically stuck until I can name my blog! At least I still have another month or so until I’m ready to start posting.
