GERD Elimination Diet – Day 59

Breakfast

I made a new pancake recipe today. It’s from the book, The Food Lab, and involves buttermilk, sour cream and whipped egg whites. The pancakes were good, but I’m not sure they’re worth whipping egg whites to stiff peaks by hand. I didn’t think I wanted to take out my Kitchenaid to whip two egg whites or even know how effective it would be with such a small amount. Maybe if I get an electric hand whisk some day, I’ll make these pancakes again. My picky husband liked them but only about as much as the regular pancakes I make, which are much less work.

I ate too many, with maple syrup, so my breakfast calorie count was 850. Oops.

Lunch

Shrimp, baby spinach and cheddar on a flour tortilla, about 390 calories.

Dinner

I made a shrimp stir fry with a bunch of vegetables and an egg on top which came to around 410 calories.

Macros

According to the Fitbit app, my split today was 48% carbs, 34% fat and 18% protein and I ate about 1650 calories.
