I had some potatoes that I really needed to use up. My favorite thing to do in this case is mash them (adding butter, cream and salt) and when they’re cooled, turn them into potato pancakes, which can be frozen for a later date. I use roughly one egg per two cups of mashed potato and add whatever I feel like–this time, the rest of my fresh chives and parsley. In the past I’ve added onion, cheese and spinach. They are highly customizable. I use about 1/3 cup per pancake and cook them in a little olive oil over medium heat for a few minutes each side until browned.
Dinner
Beef burger and baby spinach on a homemade bun, about 520 calories.
Macros
According to the Fitbit app, my split today was 35% carbs, 47% fat and 18% protein and I ate about 1530 calories.
