Today and tomorrow I’m reintroducing citrus/vinegar. I’m a bit nervous about this one, but today went fine so hopefully that continues.
Breakfast
Two potato pancakes topped with fried eggs and dukkah, about 300 calories.
Lunch
I made a tuna salad, adding celery, sour cream, dill and lemon zest, and put it on a flour tortilla with lettuce. It was pretty good. I also ate some leftover honey glazed carrots. This was about 440 calories.
Dinner
Lemon chicken with salad and a cheddar chive biscuit, about 560 calories. I thought there was too much lemon juice in the chicken sauce so I added some honey, which helped a bit. My husband ate it but didn’t really like it. I like the idea but will have to find or work on a better recipe.
Snack
Strawberries, about 30 calories.
Macros
According to the Fitbit app, my split today was 29% carbs, 44% fat and 27% protein and I ate a bit over 1300 calories.
