Breakfast
I made a coffee cake, something I don’t do very often since it’s so unhealthy. My husband was asking for it though and since I haven’t made it in over a year I decided to go ahead. I use this recipe but I use a round 9 inch pan and put half the streusel topping in the middle of the cake. I’ve thought recently about looking at other recipes, since this is the only one I’ve tried, and although I think it’s good, I don’t know that it’s the best. In fact, I don’t think I even knew coffee cake existed before coming to the US. My husband mentioned it at some point, which was how I came to make it. It’s delicious but definitely a ‘sometimes’ food. I forgot to take a photo before we ate, but maybe tomorrow morning I’ll remember to take one (we have leftovers for a day or two, depending on how much my husband eats).
My large piece of coffee cake came to about 590 calories.
Lunch
I was still pretty full from breakfast, so I just had a flour tortilla with some lettuce and the rest of the tuna salad I made yesterday. This was about 300 calories.
Dinner
Spaghetti with turkey meatballs, lemon, spinach and parmesan, with the rest of the leftover honey glazed carrots on the side. This was about 600 calories.
Macros
According to the Fitbit app, my split today was 48% carbs, 35% fat and 17% protein and I ate about 1500 calories. Not too bad considering my terribly unhealthy breakfast!
Final Thoughts
I still feel fine despite being on my second citrus/vinegar day. This was one of the main things I thought may trigger GERD symptoms, and the fact I don’t seem to be having any reaction at all makes me think I probably never had GERD. Still, I am going to see this diet through. I mean, maybe I only have symptoms from onion or garlic (though I really hope not!)
