Breakfast
Two apple flax muffins with butter, about 350 calories.
Lunch
Potato pancakes with two fried eggs and corn mixed with spinach and herbs. This was about 400 calories.
Corn is what I am reintroducing today and tomorrow.
The potato pancakes were frozen after I made a big batch last week, but I have a great way of reheating them so that they aren’t all limp and soggy. First I heat them in the microwave so they’re no longer frozen, then I fry them in a little oil for a minute or two on each side so that they are crispy again. They’re probably still not quite as good as when they’ve been freshly made, but this helps a lot.
Dinner
Salmon, corn, Brussels sprouts and a cheese and chive biscuit, about 620 calories. I overdid the corn a little. My husband asked if I was just super excited about eating corn again. I don’t know, maybe?
Snack
Strawberries, about 60 calories.
Macros
According to the Fitbit app, my split today was 40% carbs, 41% fat and 19% protein and I ate a bit over 1400 calories.
