Breakfast
Leftover pancakes with strawberries and maple syrup. I can confirm that pancakes, at least the ones I made, are still pretty good after being frozen and then defrosted in the microwave. This was about 660 calories.
Lunch
Potato pancakes, eggs, bacon, corn with herbs, about 500 calories.
Dinner
Pork schnitzel, Brussels sprouts, corn and homemade sourdough, about 630 calories.
Snack
An apple and cashews, about 240 calories.
Macros
According to the Fitbit app, my split today was 39% carbs, 44% fat and 17% protein and I ate a little over 2000 calories. Not a great day I guess. I probably shouldn’t have eaten the bacon or the second pork schnitzel, especially not after having those pancakes this morning. But I don’t feel gross or anything.
I now have two days without corn before I get to reintroduce my next food, one I have been missing a lot: garlic!
