GERD Elimination Diet – Day 83

Breakfast

The rest of my homemade granola with Greek yogurt and strawberries, about 410 calories.

Lunch

Leftover thai peanut noodles from last night, about 530 calories.

Dinner

I made kung pao chicken, which is one of my husband’s favorites. It’s the conclusion of my peanut reintroduction. I ate it with rice and broccoli and the meal came to about 590 calories.

Snack

I made these applesauce oat muffins. They’re much healthier than normal muffins and I thought they were good, but my husband didn’t like the texture. He doesn’t like a lot of things though. I’m making another batch tomorrow for my father-in-law who needs to eat better. These muffins are about 150 calories each and I ate nearly two because I finished the one my husband started eating.

Macros

According to the Fitbit app, my split today was 40% carbs, 37% fat and 23% protein and I ate about 1800 calories. Too much, but I had planned on eating only one muffin this afternoon and then I would have been fine.
