GERD Elimination Diet – Day 84

Breakfast

Leftover breakfast casserole, about 500 calories.

Lunch

I made zucchini and corn fritters and ate a few with some ham and sour cream for lunch. I kind of winged the recipe after looking at a few for zucchini fritters. It needs some tweaking but overall, they were pretty good. This lunch came to about 520 calories.

Dinner

Since taking the free courses on the Milk Street website, I’ve decided I just have to make nearly every recipe I’ve come across. The first was for dinner tonight, and I have to say I’m a bit disappointed. I followed the recipe for the za’atar chicken exactly and it just didn’t seem to have a lot of flavor. The salad, on the other hand, was excellent. I used their recipe as more of a guide, since they only used parsley, scallions and walnuts, with a dressing of lemon juice, lemon zest and olive oil. I added arugula so it was more like a proper salad, as well as some feta cheese. For the dressing I added some pomegranate molasses, which was also drizzled on the chicken. This might be my favorite salad dressing ever. I would have added cherry tomatoes if I could eat them right now, but I also think strawberries would have been good if I still had them.

Dinner was about 400 calories tonight.

Macros

According to the Fitbit app, my split today was 25% carbs, 47% fat and 28% protein and I ate about 1400 calories.
