GERD Elimination Diet – Day 85

Breakfast

I made another Milk Street recipe this morning. It is called kuku sabzi and is a baked Persian herb omelette. It has a lot of fresh herbs in it, consisting of parsley, cilantro and dill, as well as scallions. I added the optional walnuts too.

The flavor was good, but probably not good enough that I would make this again, because I have to use the food processor to chop up all the herbs and scallions and that’s a pain. I could chop them by hand but I don’t think that would be much better. It has given me some ideas for frittatas though, where I can use the same flavors but not quite so many herbs. I’d add feta cheese which I think would work really well.

This also was not substantial enough for breakfast, at least not the serving size given for the recipe. I didn’t really think about it until I was tallying my breakfast calories while feeling strangely hungry even though I’d eaten an hour before. A slice of this omelette, including the rather generous dollop of sour cream on top, is only about 280 calories.

Lunch

I ate two leftover zucchini and corn fritters with ham and sour cream, as well as a salad with arugula, carrot, cucumber and feta with the dressing I made last night. This was about 460 calories.

Dinner

I made yet another Milk Street recipe, this time spaghetti al limone. I added shrimp and broccoli to make it more of a meal and I really liked it. My husband isn’t big on lemon but he ate his anyway. This was about 620 calories. I ate a lot since I was hungry!

Snack

I had both a morning and an afternoon snack tonight. For each I had one of the applesauce oat muffins I made on the weekend, with a little butter. These snacks were around 170 calories each.

Macros

According to the Fitbit app, my split today was 32% carbs, 48% fat and 20% protein and I ate about 1700 calories.
