Breakfast
French toast is my husband’s favorite breakfast and I hadn’t made it in a while so that’s what we had today. I used brioche and put strawberries on mine. That makes it healthy, right? This was around 620 calories (I ended up having a third piece, not pictured).
Lunch
Cheese, ham, lettuce and sriracha aioli on a flour tortilla, about 290 calories.
Dinner
I made barbecue pulled chicken with telera rolls. The technique for the chicken works well but I think the sauce needed more flavor. It was perfectly edible but could have been better. I feel like it should have been so sweet with all that ketchup in it but it really wasn’t. I’ll keep an eye out for other sauces I can make with the same chicken technique.
The rolls were great, though my shaping skills leave much to be desired. I wasn’t able to buy an appropriately sized bottle of beer for the chicken so I had some extra. I don’t like beer (except in cooking and baking) and my husband only liked certain kinds, so I added the excess beer to the roll recipe instead of some of the water. I didn’t really notice any beer flavor, but I’ve only made beer bread rolls once before and they didn’t have any beer flavor until the next day. That wasn’t the point of these rolls though, I just wanted rolls to go with my chicken and they served that purpose well. My husband liked them so much that after eating two rolls with chicken he had a third on its own.
I just had one roll with chicken and lettuce, which came to about 360 calories.
Snacks
I ate two Lindt dark chocolates, in the morning and after dinner. These are 77 calories each.
Macros
According to the Fitbit app, my split today was 54% carbs, 28% fat and 18% protein and I ate about 1420 calories.
